Espresso comes from the words "EXPRESS" (quick) and "PRESSURE" (pressure), combining to describe coffee that is extracted using a machine with pressure. Hot water is rapidly passed through ground coffee. The process involves taking finely ground coffee and placing it into an espresso machine. The machine quickly releases hot water with immense pressure, transforming the hot water and coffee grounds into a concentrated espresso drink.

STEP ONE
Remove your portafilter from the espresso machine’s grouphead. Place it on a scale and tare the weight.
STEP TWO
Use about 18-20 grams of ground coffee in the basket. The grind size should be fine, similar to baking powder, but not too fine.
STEP THREE
Before tamping the coffee, it’s recommended to level the coffee grounds by gently tapping the portafilter with your hand. If you want the coffee grounds to shift in a particular direction, tilt the portafilter in that direction. This will help ensure that the coffee grounds are more evenly distributed.
STEP FOUR
Place the tamper on top of the coffee grounds and apply even pressure. Position your hand at a 90-degree angle, parallel to the surface, without tilting to either side. Then, press down gently using pressure from your shoulder. Press once without excessive force—just enough to compact the coffee evenly. Afterward, lightly rotate the tamper 180 degrees to smooth the coffee surface for a more even extraction.
STEP FIVE
Insert the portafilter into the grouphead and start the extraction. Aim for an extraction time of 26-32 seconds, with the coffee yield being around 36-42 milliliters, then stop the extraction.
